Fall Veggies

Swiss Chard & Honeynut squash turn our Cauli Mac into the easiest fall dish of all!

Grocery List

1 Bowl Ark Foods Cauli Mac + Cheese

½ Honeynut squash, medium-cubed, skin on (~4 oz)

3 Rainbow Swiss chard stems + leaves

½ tsp onion powder

Sea salt + pepper to taste

⅛ c Pepitas (optional)

Prep + Cook

1. Wash and cube half a Honeynut squash (skin on!). Place the squash in a medium-large microwave-safe bowl with 1/8 c water and cover with a paper towel. Microwave for 7 minutes.

2. Carefully remove the bowl from the microwave, as it may be hot. Add the onion powder and the cauliflower from the Ark Foods Cauli Mac + Cheese. Re-cover with the paper towel and return to the microwave for 2 minutes and 30 seconds.

3. While the squash is heating, wash, dry and thinly slice 3 stems of Rainbow Swiss Chard. Remove the bowl from the microwave, drain all excess liquid, and add the chard, then recover and return for one final minute. Remove warmed veggies and set aside.

4. Microwave Ark Foods cheese sauce in a small bowl for about 30 seconds until sauce is softened and warmed through.

5. Toss the cooked veggies in the plant-based cheese sauce from the Ark Foods Cauli Mac + Cheese bowl. Sprinkle with sea salt, freshly ground pepper, and toasted pepitas and enjoy your seasonally inspired plant-based Mac + Cheese.
