Fall Slaw

Raw fruits + veggies get dressed up to rival traditional holiday sides.

Grocery List

1 container of Ark Foods Veggie Spaghetti rutabaga noodles

1 cup carrot, shredded

1/2 shallot, sliced paper thin

1 large red pear (hard), julienned (or mixed pears equaling roughly ½ cup)

4 sprigs mint, leaves chiffonade

2 tbsp olive oil

1 tbsp apple cider vinegar

1 tbsp honey

1/2 a lime, juiced and zested

1/2 tsp spicy mustard

Salt and pepper to taste

Julienne peeler

Prep + Cook

1. Open Ark Foods Veggie Spaghetti container, and remove sauce packet for another recipe.

2. Chop rutabaga noodles into 1” noodles.

3. Julienne 1 cup of carrots using peeler

4. Slice shallots so they’re paper thin

5. Julienne 1 red pear using a peeler

6. Chiffonade mint leaves

7. Mix all rutabaga, carrots, shallots, pear, and mint together in a large bowl and reserve

8. Whisk together olive oil, apple cider vinegar, lime juice and zest, honey, spicy mustard. Add salt and pepper to taste.

9. Pour marinade over slaw and serve.
