Tomatoes with Capers & Pine Nuts
Our mini heirloom tomatoes get the ultimate savory dressing tossed with capers, pine nuts and shallot or purple onion.

2 pints Mini Heirloom tomatoes
Shallot or purple onion
Pine nuts
Capers
Olive Oil
Salt + Pepper
Prep + Cook
1. Rinse tomatoes and slice in half, then place in a serving dish.
2. Mince red onion or shallot and add to tomatoes to taste (we used about 1/4 of a small red onion).
3. Sprinkle in a generous handful of pine nuts and 1-2 tablespoons of capers, depending on how much you like the flavor.
4. Drizzle with olive oil, salt and pepper to taste and toss salad then serve.
