Za'atar Fairy Tale Eggplants with Tahini Dip
Charming Fairy Tale eggplants get spiced up with Za'atar, making a perfect healthy dipper for our tahini lemon spread.

1 tbsp. za'atar
1 bag of Ark Foods Fairy Tale Eggplants
Olive oil
Salt + Pepper
1/4 cup tahini
1/2 lemon
Water (to taste for texture)
Prep + Cook
1. Toss washed and halved Fairy Tale eggplants in olive oil, za'atar and salt and pepper.
2. Spread well-coated eggplants on a sheet pan and roast for 20 minutes at 450.
3. While the eggplant is roasting, whip tahini, lemon juice, salt, pepper and water (to taste) in a bowl to make the dip.
4. Serve dip with roasted eggplants as a side or appetizer.
